My mother served them either pickled or boiled. I didn't hate them, but they seemed like more trouble than they were worth--covered with dirt and bleeding red dye over everything they touched. I never cooked them myself until I joined the CSA and had them forced on me as part of our farm share. They are slowly growing on me.
