Russian Beet Recipe

Didn't want to heat up the oven to roast some beets, so I nuked them in a covered dish and made this. Used yogurt instead of sour cream or mayo and left out the prunes. Michael, who is not a fan of beets, said they did not taste bad.

Nuking the beets with their skins still on was a revelation. I scrubbed them then put them whole in a covered dish with a little water. After they cooled, I could just pull the skins off with my fingers.

That sounds a little like how we de-skin tomatoes, except we just use boiled water in a bowl, rather than microwaving.

I'll have to try that. I've got a recipe for roasted beets with walnuts and goat cheese that was a revelation for me after years of disliking them.

Same here--a few years ago, I had a lovely salad with goat cheese and roasted beets in a restaurant, and I decided to give them a second look.
