Russian Beet Recipe

Didn't want to heat up the oven to roast some beets, so I nuked them in a covered dish and made this. Used yogurt instead of sour cream or mayo and left out the prunes. Michael, who is not a fan of beets, said they did not taste bad.

I like putting okra in soup--there are many recipes and cooking it in liquid mitigates the sliminess.

I thought of that, and Sally also suggested breading and frying (though it would be oven-frying for me.) I will let you know how it turns out :)
