Didn't want to heat up the oven to roast some beets, so I nuked them in a covered dish and made this. Used yogurt instead of sour cream or mayo and left out the prunes. Michael, who is not a fan of beets, said they did not taste bad.

Beets and cilantro (ugh, soap!) are on my CSA do-not-want list. I'm wondering what I'm going to do with this week's okra, though.

I thought of that, and Sally also suggested breading and frying (though it would be oven-frying for me.) I will let you know how it turns out :)

ahahahahaha.

Oh! OKRA! yum. Grill those puppies! I used to toss them with olive oil, salt and pepper, and throw them on a grill in a mesh pan. Awesome and very little slime. If you don't have a grill, which I don't anymore, you could always roast them. Much much better than steaming or poaching.

Roasting them! That's an idea. I've had good success with roasting squash this summer, too.
